This “salad” is packed full of super foods and absolutely delicious! You can definitely eat this salad raw, but I prefer it roasted. Roasting it really brings out the flavors of the broccoli and carrots..and the raisins. You have to try roasted raisins!! They are so unexpectedly good its ridiculous.
This salad is perfect for when your body is feeling sluggish or bloated. This salad will have you feeling so much better but also keep your stomach full.
Roasted Detox Salad (Makes about 2-3 meals worth)
- 1 bag broccoli and cauliflower mix – remove stems
– 2 carrots
– 1 can corn, drained
– 3/4 C. raisins
– 1 C. chicken, cooked and chopped
– honey
– salt and pepper
- Preheat oven to 400
– In a food processor (or blender, or by hand) chop the broccoli, cauliflower and carrots.
– Add chopped veggies to large bowl. Mix in corn and raisins.
– Season chicken with salt and pepper and add to veggie mixture. (You could totally leave chicken out if you want!)
– Drizzle with honey (as much as you like) and pour onto baking pan
– Roast in oven for about 20-25 minutes
* I have eaten this warm out of the oven and cold. I personally prefer cold, but both ways are delicious!
* Sometimes I add frozen Amy’s Organic Sweet Potato Puffs to this salad to make it a little more filling (That’s what those orange things are in the pictures)
